The ideal Lead Cook candidate is a skilled, reliable culinary professional who thrives in a fast‑paced kitchen and leads by example. Candidates must have at least 2 years of restaurant line cook experience and demonstrate strong leadership and communication skills. Flexible availability is required, including evenings, weekends, and holidays. Prior experience in an entry‑level leadership role is preferred but not required. This role is ideal for a motivated cook ready to support kitchen operations, guide team members, and uphold high standards of quality, consistency, and teamwork.
What will I be doing?
As a Lead Cook, you would be responsible for preparing, producing and working the line for Primero Cantina in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:
Prepare food items according to designated recipes and quality standards
Create daily and weekly prep lists to support service needs
Delegate prep items and tasks to cooks and kitchen teams efficiently
Train and onboard new staff and cooks on kitchen operations, procedures, and SOPs
Perform line checks and ensure food quality, consistency, and presentation standards are met
Maintain cleanliness and comply with food sanitation standards at all times
Maintain accurate daily prep logs and proper labeling for walk‑in coolers and storage areas
Manage guest orders in a friendly, timely and efficient manner
Ensure knowledge of menu and all food products
Stock and maintain designated food station(s)
Visually inspect all food sent from the kitchen
Practice correct food handling and food storage procedures according to federal, state, local and company regulations
Prepare requisitions for supplies and food items, as needed
