The Texas Tribal Buffalo Project (TTBP) is a Lipan Apache-led, 501(c)(3) nonprofit. Job Summary
The Meat Program Manager will develop, oversee, and grow TTBPʼs buffalo meat sales and value-added programs, uphold the highest standards of food safety and product quality, and help connect our mission of food sovereignty with local Indigenous communities. This position integrates operational leadership, meat handling expertise, educational outreach, and collaboration with a dynamic, values-driven nonprofit team [1] [4] [3] .
Key Responsibilities
Direct all aspects of the meat program, including processing, packaging, storage, distribution, sales, and compliance.
Organize and manage day-to-day meat department operations, ensuring product quality and food safety (including HACCP/SERV Safe standards).
Lead, train, and supervise staff; foster a collaborative, culturally respectful, and team- oriented work environment.
Maintain inventory accuracy, order supplies, and minimize waste.
Develop and implement merchandising and sales strategies, including farmers market/outreach events.
Engage with community members, customers, and partner organizations to promote Indigenous foodways and TTBPʼs mission.
Document processes, conduct regular audits, and maintain clear records compliant with regulatory and grant requirements.
Collaborate on workshops and educational programs highlighting butchery, food sovereignty, and regenerative agriculture.
Uphold TTBPʼs Indigenous-led, matriarchal, and consensus-driven leadership values.
Qualifications
Minimum 2 yearsʼ experience in retail or production meat handling, butchery, or management.
Knowledge of meat cutting (including buffalo, preferred), portion control, and equipment (e.g., band saws, grinders, slicers, packaging).
Strong grasp of food safety, sanitation, and compliance protocols (HACCP/ServSafe certification preferred or willingness to obtain).
Demonstrated leadership, staff management, and training abilities.
Inventory and product management, as well as familiarity with merchandising.
Passion for Indigenous foodways, regenerative agriculture, and willingness to engage in community outreach.
Strong communication, problem-solving, adaptability, and time management skills. Commitment to TTBPʼs mission, values, and equity in food systems.
High school diploma/GED required; some college a plus. Must be 18+ and legally eligible for employment.
Meat, retail management, and leadership certificates encouraged.
Compensation & Benefits
Hourly wage: $20-$28/hour (annualized $40,000-$52,000+) depending on experience and credentials[5] [6] .
