Head Chef / Kitchen Manager
Job Summary:
Lead kitchen operations in a high-volume sports bar. This role is responsible for food quality, speed, cost control, and kitchen staff performance.
Core Responsibilities:
Kitchen Operations:
- Oversee daily kitchen operations during prep and service.
- Ensure all food is prepared and plated consistently to standards.
- Maintain speed of service during peak hours.
Food Quality & Consistency:
- Enforce standardized recipes and portion control.
- Conduct regular quality checks on all dishes.
- Train staff on presentation and taste standards.
Inventory & Cost Control:
- Manage inventory levels and place orders with vendors.
- Track and control food cost and waste.
- Conduct weekly inventory audits.
- Prevent over-ordering, spoilage, and theft.
Staff Management:
- Hire, train, and schedule kitchen staff.
- Assign stations and manage shift performance.
- Enforce discipline, hygiene, and work standards.
- Replace underperforming staff quickly.
Prep & Production Planning:
- Plan daily and weekly prep based on sales forecast.
- Ensure all stations are fully stocked before service.
- Optimize prep workflow to reduce delays.
Health & Safety Compliance:
- Ensure full compliance with local health codes.
- Maintain cleanliness of kitchen, storage, and equipment.
- Enforce food safety and sanitation standards.
Menu Execution & Support:
- Work with management on menu updates and pricing.
- Control portion sizes to maintain margins.
- Identify slow-moving or waste-heavy items and recommend changes.
Performance Expectations (Be Clear – This Matters):
- Maintain food cost within target range (typically 25–35%).
- Zero tolerance for hygiene violations.
- Consistent ticket times during peak hours.
- Minimal food waste and spoilage.
Requirements:
- 5+ years as Head Chef or Kitchen Manager in high-volume restaurant.
- Strong understanding of inventory, costing, and kitchen operations.
- Ability to manage team under pressure.
- Availability nights, weekends, and holidays.
