Essential Duties:

• Ensure dining, service and food preparation areas and equipment are maintained in a clean and sanitary manner; and ensure compliance with sanitation, safety and health regulations.

• Provide staff training; evaluate staff performance and implement organizational and personnel changes as approved by the major of CO's and human resources.

• Inspects food for quantity, quality and temperature; assure proper storage and use of inventory; and supervises the monitoring and logging of temperatures.

• Instruct employees and offenders on safety rules and regulations, proper use of soaps and chemicals including Material Safety Data Sheets (MSDS), sanitary procedures, food preparation and portion control, and the operation of food service equipment.

• Advises on food requirements and recipes; and calculate monthly, quarterly, semi-annual and annual food requirements; prepares and approves requisitions for food items, supplies and equipment.

• Prepares daily menus; ensures adequate controls are maintained over food preparation quantities and portion sizes; prepare menus for special diet requirements of offenders; and reviews cooks' worksheets for accuracy.

• Oversees the department budget and ensures the department operates efficiently, within budget; prepares budget reports and reconciles the budget monthly.

• Plan, assigns and supervises the work of employees and offenders; reviews employee and offender work schedules for adequate coverage; establishes and administers orientation and departmental in-service training programs for food service staff and offenders.

Qualifications:

• Graduation from an accredited high school or equivalent (GED).
• Three (3) years full-time, wage-earning experience in correctional, commercial, or institutional food service preparation or management.
• Two (2) years full-time, wage-earning experience in the supervision of employees.
• Two (2) years full-time , wage-earning correctional custody or law enforcement experience.
• Thirty (30) semester hours from a college or university accredited by the Council for Higher Education Accreditation (CHEA) or by the United States Department of Education (USDE) or equivalent technical trade school courses in the field of culinary, hotel, or restaurant management may be substituted for one (1) year of the required experience on a year-for-year basis for a maximum substitution of two (2) years.
• Must have or be able to obtain current, valid ServSafe Food Safety Certification by an authorized association, organization, or government entity with twelve (12) months of employment date. Must maintain valid certification for continued employment in position.
• A valid driver's license in the state of Texas with an acceptable driving record, unless waived by management.
• Must successfully complete and pass annual background check and in-service training requirements, both of which must be approved by the Texas Department of Criminal Justice (TDCJ).
